Vinification
The grapes are hand-picked at dawn from the estate’s oldest vines, in late August onwards. Their juices are gently extracted, in an oxygen-free environment, using a state-of-the-art press.
After light racking, the juices undergo several weeks’ stabulation, and are then vinified at 15°C in temperature-controlled vats.
